So, I was curious, as to what a Hammond Organ sounded like without, a Leslie Speaker, cabinet? It sounds a bit harsh and annoying. I understand why, the two go together. The Leslie creates a more softer and mellower tone.

It definitely changes the tone. In the clone world, it's often said the most important part is the Leslie sim. A good/great Leslie sim will make a poor Hammond clone useable. That's why the Ventilator is so popular.
OTOH, Jon Lord didn't use a Leslie. He used highly overdriven Marshall amps! Check out early Deep Purple. Hush, Highway Star, Smoke on the Water…
