I've got a Casio Keyboard CT-638 which I've been messing around a little lately.
It's got a ton of tones in the "tonebank" but all I'm really interested in are the straight "Piano", "Organ" and the Accompaniments like the drum beats.
I've had a hard time figuing out how to have the drum beat synced with the piano/organ.
Can anyone shed light on this?

I used to own a very similar model Jim. What is the problem you're having? The tempo is controlled by two buttons that look like up & down arrows. It can't follow you, you need to set it to a speed where you can keep time comfortably. There's multiple modes on the on/off switch depending what you want to do - 'On' - just gives you all the keys as with a piano. The other modes allow you to control the accompaniment using your left hand on the marked section, but mean you won't hear the notes you play in that section. 'Fingered' - lets you play a chord as normal with the left hand and have the accompaniment follow you. 'Casio Chord' - lets you direct the accompaniment around major chords by just pressing the root note. I think you can also do minors by adding the flattened 3rd to the root & 7ths by adding the 7th to it. Great help Pete. I was also having a little problem understanding how to access all of the tones at the top. Not that I'll ever use them.

Unfortunately it's 15 years since I used mine & my memory is pretty hazy, but there's a way to cycle through them. The first number lets you know which yellow button you need to select & then you use the 'tone bank' button. It either allows you to enter the second number on the yellow keys or else just cycles through the sounds attached to each button.
