Do you prefer to have your humbucker pups tapped or not? If so, which -bridge or neck, and how do yo prefer to switch?
The world wants to know...and since I'm an old single coil guy, I caan't really answer.

It kind of depends but often can be very useful. I had 2 tapped DiMarzio "Dual Sound" ones in a Gibson L6 Special that had a small toggle switch for each. These worked well in a band setting as allowed to set a sound that was separate from another players electric guitar so no overlap in the mix. It helped fill out the overall sound and add clarity. That and gave more variety in sounds. The tapped part of the pickups were still humbucking but brighter sort of Fender like but really reminded me more of the DeArmond single coil sounds like on older style Gretsch models. Going from tapped to full also gave a useful output boost.
I don't have any now on my HB guitars as don't need too much and on some don't want to change pickups $$$$ or are valuable (Les Paul Historics) so best to be completely original and unaltered. Another way to kind of do a tapped effect is add an overcompensated "bleeder" capacitor to the circuit. With this when one turns the volume control down the sound becomes thinner and brighter due to removing more of the low end frequency of the pickup. This is an easy mod for a few dollars and basic soldering skills. It does require a tone control in the circuit but probably could be done even without one.

I think the idea is good but in practice I have been in a band with a guitarist who has a HB guitar that has taps. He said to me that they were OK if the amp was adjusted but it was too much bother messing around to get the usage live. Probably more useful in a recording situation where you just want to take one guitar- my opinion based on what I have heard first hand. But as above, more useful to start from the tapped sound to full HB.

Probably the best scenario I found with taps were using various neck + bridge combinations. I played '58RI Les Paul last night though and didn't really need that having the 2 volumes to adjust in the N+B position instead of just the one on the mentioned L6 Special.
